Food Science & Human Nutrition Special Topic Course Offerings - Spring 2018

FOS4936 - Grain Technology in Food Science (3 credits)

Meets: R 2-3 period (8:30-10:25) & F 2 period (8:30-9:20)
Prerequisite: Chemistry/Biochemistry or Instructor Approval

Description: The lectures deal on the basic science of the 5 leading cereal grains (rice, corn, wheat, sorghum, and barley) with emphasis on their physical, chemical, and biochemical properties and their relevance on the processing, application and utilization of the cereal grains in foods. Counts toward the Food Science minor and appropriate for students interested in Brewing Science.

HUN4813C - Lab Techniques in Molecular Nutrition w/ Dr. Robin DaSilva (3 credits)

Meets: M 2-3 period (8:30-10:25) & W 2-4 period (8:30-11:35)
Prerequisite: CHM2211 & CHM2211L

Description: Will introduce students to the theory, practice, and application of a variety of laboratory techniques that can be used to answer questions in nutritional sciences. This course will cover both gold standard and cutting edge research techniques in nutrition. Students will be challenged to apply their knowledge of nutrition to real research questions.

HUN4936 - Nutrition Education and Communication in Health (3 credits)

Meets: M 3-4 period (9:35-11:35) W 4 period (10:40-11:35)
Prerequisite: HUN2201

Description: This course will provide an introduction to communicating with and educating patients, colleagues, and other populations on good nutrition practices. The course focuses on the role of health care providers as nutrition educators, the degree to which various health care professionals can incorporate nutrition education into their practice, effective referral to and collaboration with dietetic professionals, and how to communicate health information in an effective manner.

This email officially announces the opening of our 2018-2019 Herbert Wertheim College of Engineering Undergraduate Scholarship Program.  You will find the scholarship application at the following web site:  https://www.eng.ufl.edu/students/students/awards-and-scholarships/undergraduate-scholarship-application/

This one application will make you eligible for consideration of a host of Herbert Wertheim College of Engineering scholarships, funded by generous corporate and individual donations to our UF Foundation (http://www.uff.ufl.edu).  

After you have submitted your application, your department may conduct an interview process.  

You will need your Gatorlink ID and password to enter into the system.  If you submitted your application and remembered something you wanted to add or change afterwards, know that your departmental undergraduate coordinator/advisor can edit this information.

The Undergraduate Summer Research Grant Program (USRG) will take your academic career to the next level. The USRG program at Texas A&M University provides an exciting and unique opportunity for undergraduate students to immerse themselves in research under the guidance of College of Engineering faculty, postdoctoral fellows and advanced graduate students.

We’re looking for talented sophomores, juniors and seniors who are interested in spending their summer break at Texas A&M. Accepted applicants will travel to our campus in College Station, Texas and conduct research from May 29 through August 3, 2018. The program culminates in a poster session where you will have the opportunity to present your own research to faculty members and your peers, gaining valuable insight and experience.

Operation Groundswell is a non-profit organization that runs volunteering programs abroad. We examine various social justice issues while working in solidarity with local activists, non-profit organizations, and communities. We are looking for globally conscious and socially active students who want to spend their summer exploring some of the most complex and beautiful countries in the world!

AFA Food Institute

If you are interested in learning more about what it takes to get food on your table, this Institute is for you! What happens after the raw ingredients leave the farm? From production and processing to R&D and marketing to packaging and everything in between, AFA Food Institute delegates are sure to leave with a broader picture of the food industry.

CALS will assist with a portion of travel expenses if students are selected (usually ½ of the plane ticket, up to $200).

Held annually in the winter months, the AFA Food Institute brings around 75 talented college men and women to the Chicago area to take part in a three-day program. Students are selected through a competitive application process and have expressed a specific interest in the food sector. The itinerary will provide interaction between students and food sector leaders; expose students to area processors, businesses and other related service providers and include discussion and training to enhance student preparation to enter careers in the agriculture and food industry.

Innovation is extremely important for enterprises, organizations, governments, and for society as a whole. But how do you know if your idea is good, or just good enough? Or if your business model is simply sustaining your operation in the market or disrupting it?

Globalization of the food supply has provided many opportunities for farmers, food processors, retailers, and consumers alike, but such a system also creates many challenges. Come discuss these issues and more in a fun, engaging, interdisciplinary, low-stakes learning atmosphere where using technology (yes, even cell phones) is not only permitted, but encouraged!

This course is open to undergraduates and graduates alike and requires students to explore the role of innovation in food systems from a reverse chain perspective. Students will gain knowledge of the food system framework from a multi-level (i.e. global, national, and regional/local) perspective, identify current, innovative business and technological practices, as well as present and think critically about future trends in food.

Florida Cicerones: Decide to Rise

The Florida Cicerones are the official student ambassadors of the University of Florida. Decide to Rise reflects our devotion to serving the University of Florida by engaging with future alumni through the Student Alumni Association, giving campus tours with the Office of Admissions, hosting potential student athletes with the University Athletic Association, and serving the guests of President Fuchs. Since 1968, we have been dedicated to sharing our student experiences to connect others to the Gator community. Our distinguished speaker will be Dr. Monika Maleszewska who carries a PhD in cell and molecular biology, and navigated her way to become scientific project manager at Applied Stem Cell Inc. Join us as Dr. Maleszewska shares her career journey spurring insights about the importance of career development as well as other valuable life experiences and lessons. You don’t want to miss this. Assistant Farm Manager Position-Aqua Farming Tech

This is an on the ground assistant manager position with housing provided. The Assistant Farm Manager will help ensure the smooth operation of the day-to-day activities at our farm facility where the main crops are tilapia, silver carp and catfish; the farm plans to also cultivate shrimp next year. The position will report to the Farm Manager and will be trained in all aspects of the farm’s operations. This is an exciting position with great potential for earning and professional growth.

Qualifications:
• Bachelor or Masters Degree in Aquaculture/Fisheries • Understanding of land-based recirculating aquaculture systems, water quality analysis and management of fin fish health and welfare throughout all aspects of operation. • 2 years + field experience • Mechanically inclined – electrical and mechanical • Understanding of hatchery operations • Knowledge of feed formulation • Bilingual (English/Spanish) helpful • Experience in cultivating shrimp helpful • Well organized, detail oriented, good leadership skills and strong planning skills • Strong communication skills (both verbal and written) • Proficiency in: Microsoft Office Word, Excel • Ability to work outdoors in ALL weather conditions – this area experiences high summertime temperatures • Ability to operate equipment backhoe, dozer - helpful
